Sweet potatoes – 4 medium
about 2 lbs, peeled and cubed
Olive oil – 3 tbsp
Chili powder – 1 tsp
Smoked paprika – 1 tsp
Cayenne pepper – ½ tsp
Garlic powder – 1 tsp
Salt – 1 tsp
Black pepper – ½ tsp
Fresh cilantro – 2 tbsp
chopped (for garnish)
Instructions
Preheat oven to 400°F (200°C).
Line baking sheet with parchment paper.
Toss sweet potato cubes with olive oil, chili, paprika, cayenne, garlic powder, salt, and pepper.
Spread evenly in a single layer.
Roast 30–35 minutes, stirring halfway until golden and crispy.
Garnish with cilantro and serve hot.
