- 2 cups chopped vegetables carrots, celery, and onions
- 1 cup diced potatoes
- 2 cloves garlic minced
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
For the Snack:
- 1 cup hummus
- 1 cup sliced cucumber
- 1 cup cherry tomatoes halved
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
In a large pot, combine vegetable broth, garlic, and chopped vegetables.
Bring to a boil, then reduce heat and simmer for 15 minutes.
Add potatoes and thyme, cooking until vegetables are tender.
For a creamy texture, blend part of the soup and return it to the pot.
Season with salt and pepper to taste.
Serve with a drizzle of olive oil and balsamic vinegar for the snack side.
