Ingredients
  

  • 1 cup vegan salmon chunks
  • ½ cup chopped cucumbers
  • ½ cup chopped tomatoes
  • ½ cup chopped lettuce
  • ¼ cup sweet corn
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon soy sauce
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon chili flakes
  • 2 tablespoons chopped coriander

Instructions
 

  • Add vegan salmon to a bowl.
  • Add cucumbers and tomatoes.
  • Add lettuce.
  • Add sweet corn.
  • Add olive oil.
  • Add lemon juice.
  • Add soy sauce.
  • Add salt and pepper.
  • Add chili flakes.
  • Toss gently.
  • Garnish with coriander.
