Ingredients
  

  • Salmon fillets: 4 pieces 6 oz each
  • Cherry tomatoes halved: 1 cup
  • Kalamata olives pitted, halved: ½ cup
  • Red onion sliced: ½ onion
  • Olive oil: 2 tbsp
  • Fresh basil chopped: 2 tbsp
  • Salt: ½ tsp
  • Black pepper: ½ tsp
  • Lemon for garnish: 1, sliced

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Arrange salmon on a baking sheet and season with salt and pepper.
  • In a bowl, mix tomatoes, olives, red onion, and olive oil. Spoon mixture over salmon.
  • Bake for 15-18 minutes or until salmon is cooked through.
  • Garnish with fresh basil and lemon slices.
