Ingredients
  

  • Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
  • Olive oil – 2 tbsp
  • Honey – 3 tbsp
  • Cinnamon – ½ tsp
  • Salt – ½ tsp
  • Black pepper – ¼ tsp
  • Fresh parsley – 1 tbsp chopped (optional garnish)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Line baking sheet with parchment paper.
  • Toss sweet potato cubes with olive oil, honey, cinnamon, salt, and pepper.
  • Spread evenly in a single layer.
  • Roast 30–35 minutes, stirring halfway, until tender and caramelized.
  • Garnish with parsley and serve hot.
