Ingredients
  

  • Sweet potatoes – 2 large about 1.5 lbs, cubed
  • Olive oil – 2 tbsp
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Vegan feta cheese – ½ cup crumbled
  • Fresh parsley – 2 tbsp chopped
  • Lemon juice – 1 tbsp

Instructions
 

  • Preheat oven to 425°F (220°C). Line baking sheet with parchment.
  • Toss sweet potato cubes with olive oil, salt, and pepper.
  • Spread evenly on baking sheet. Roast 25–30 minutes until golden and caramelized.
  • Transfer roasted potatoes to bowl. Sprinkle with vegan feta and parsley.
  • Drizzle lemon juice before serving.
