- Sweet potatoes – 2 large about 1.5 lbs, cubed
- Olive oil – 2 tbsp
- Salt – 1 tsp
- Black pepper – ½ tsp
- Vegan feta cheese – ½ cup crumbled
- Fresh parsley – 2 tbsp chopped
- Lemon juice – 1 tbsp
Preheat oven to 425°F (220°C). Line baking sheet with parchment.
Toss sweet potato cubes with olive oil, salt, and pepper.
Spread evenly on baking sheet. Roast 25–30 minutes until golden and caramelized.
Transfer roasted potatoes to bowl. Sprinkle with vegan feta and parsley.
Drizzle lemon juice before serving.
