Ingredients
  

  • 4 medium apples cored and cut into slices
  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 cups mixed greens like arugula or spinach
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup crumbled feta cheese optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Toss apple slices with olive oil, cinnamon, and maple syrup.
  • Spread apple slices on a baking sheet in a single layer.
  • Roast apples for 25 minutes or until tender and slightly caramelized.
  • While apples roast, toss mixed greens with lemon juice.
  • Once apples are done, let them cool slightly.
  • Add roasted apples to the greens and toss gently.
  • Top with chopped nuts and feta cheese.
  • Serve immediately or chill for 10 minutes before serving.
