- 2 tablespoons maple syrup
- 1/4 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 2 cups mixed greens like arugula or spinach
- 1/4 cup chopped walnuts or pecans
- 1/4 cup crumbled feta cheese optional
Preheat oven to 400°F (200°C).
Toss apple slices with olive oil, cinnamon, and maple syrup.
Spread apple slices on a baking sheet in a single layer.
Roast apples for 25 minutes or until tender and slightly caramelized.
While apples roast, toss mixed greens with lemon juice.
Once apples are done, let them cool slightly.
