- 1 cup quinoa
- 1/2 cup dried cranberries
- 1/2 cup roasted butternut squash cubed
- 1/2 cup roasted Brussels sprouts halved
- 1/4 cup chopped pecans
- 1/4 cup feta cheese optional
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Cook quinoa according to package instructions, then set aside to cool.
Roast butternut squash and Brussels sprouts at 400°F for 20 minutes, turning halfway.
In a large salad bowl, combine quinoa, cranberries, roasted squash, Brussels sprouts, and pecans.
