- 1 cup unsalted butter softened
- 1 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1/2 cup pumpkin puree
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chocolate chips optional
Preheat the oven to 350°F (175°C).
Cream together butter, sugar, and brown sugar until smooth and fluffy.
Add in the egg, pumpkin puree, and vanilla extract. Mix until combined.
In another bowl, whisk flour, baking soda, cinnamon, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the wet mixture. Stir until combined.
Fold in chocolate chips if desired.
Drop spoonfuls of dough onto a parchment-lined baking sheet.
Bake for 12-15 minutes, or until golden brown.
Let cool on a wire rack before serving.
