Ingredients
  

  • 1 cup pumpkin puree
  • 1 tablespoon pumpkin spice
  • 1/4 cup brown sugar
  • 1/4 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup chopped nuts optional
  • 1/4 teaspoon cinnamon
  • 1/4 cup maple syrup

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix pumpkin puree, pumpkin spice, cinnamon, and vanilla.
  • Stir in brown sugar, oats, and maple syrup.
  • Add chopped nuts if using and mix until combined.
  • Scoop spoonfuls onto a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until golden brown.
