- Large potatoes: 2
- Vegan turkey mince soy or pea protein based: 250 g
- Olive oil: 1½ tbsp
- Onion finely chopped: ½ cup
- Garlic minced: 1 tsp
- Smoked paprika: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Dried oregano or thyme: ½ tsp
- Nutritional yeast: 1½ tbsp
- Plant milk: 2 tbsp
- Fresh parsley chopped: 2 tbsp
Preheat oven to 200°C.
Pierce potatoes with a fork and place on a baking tray.
Bake 25–30 minutes until soft inside.
Heat olive oil in a pan over medium heat.
Add onion and sauté 3 minutes until soft.
Add garlic and cook 30 seconds until fragrant.
Add vegan turkey using 250 g, breaking gently.
Season with paprika, oregano, salt, and pepper.
Cook 5–6 minutes until heated and lightly browned.
Cut baked potatoes open and scoop centers into a bowl.
Mash potato with plant milk and nutritional yeast.
Stuff mash back into skins and top with turkey mixture.
Garnish with parsley and serve hot.
