  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 cup corn kernels

Instructions
 

  • Heat 1 tbsp olive oil in a large pot over medium heat.
  • Add 1 cup onion and 1 cup bell pepper, sauté for 5 minutes.
  • Stir in 3 cloves garlic and cook 1 minute.
  • Add 12 oz plant-based turkey, cook 5 minutes, stirring frequently.
  • Mix in 2 tbsp tomato paste, 1 tbsp chili powder, 1 tsp cumin, and 1 tsp smoked paprika.
  • Pour in 28 oz crushed tomatoes and 2 cups vegetable broth.
  • Add 2 cups kidney beans, 1 cup black beans, and 1 cup corn.
  • Season with salt and black pepper.
  • Simmer uncovered for 25 minutes, stirring occasionally.
  • Taste, adjust seasoning, and serve warm.
