Ingredients
  

  • 1 tbsp olive oil
  • 12 oz plant-based turkey crumbles
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic minced
  • 2 cups cooked kidney beans
  • 1 cup cooked black beans
  • 1 can 28 oz crushed tomatoes
  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup corn kernels

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and bell pepper, cook 4 minutes.
  • Stir in garlic and cook 1 minute.
  • Add plant-based turkey crumbles and cook 5 minutes.
  • Mix in kidney beans, black beans, crushed tomatoes, and vegetable broth.
  • Add chili powder, paprika, cumin, salt, and pepper.
  • Bring chili to a simmer and cook 25 minutes.
  • Stir in corn kernels during the last 5 minutes.
  • Serve warm.
