  • Sourdough starter — 1 cup
  • Oat flour — 1 cup
  • Plant protein powder — ½ cup
  • Maple syrup — ⅓ cup
  • Coconut oil — 2 tablespoons
  • Unsweetened almond milk — ¼ cup
  • Vanilla extract — 1 teaspoon
  • Baking soda — ½ teaspoon
  • Salt — ¼ teaspoon
  • Vegan chocolate chips — ½ cup

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Add sourdough starter (1 cup) and almond milk (¼ cup) to a bowl.
  • Stir in maple syrup (⅓ cup) and coconut oil (2 tablespoons).
  • Add oat flour (1 cup) and protein powder (½ cup).
  • Mix until cookie dough forms.
  • Stir in vanilla extract (1 teaspoon), baking soda (½ teaspoon), and salt (¼ teaspoon).
  • Fold in chocolate chips (½ cup).
  • Scoop dough onto baking sheet.
  • Bake for 10–12 minutes.
  • Cool before serving.
