  • 8 oz udon noodles
  • 12 oz plant-based shrimp
  • 1 tbsp sesame oil
  • 1 cup sliced mushrooms
  • 1 cup shredded cabbage
  • ½ cup shredded carrots
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp grated ginger
  • 2 cloves garlic minced
  • 1 tsp rice vinegar
  • 2 tbsp sliced green onions
  • 1 tsp sesame seeds

Instructions
 

  • Cook udon noodles (8 oz) in boiling water according to package instructions, then drain.
  • Heat sesame oil in a skillet over medium heat.
  • Add plant-based shrimp and cook 4 minutes.
  • Stir in mushrooms, cabbage, and carrots, cook 3 minutes.
  • Add garlic and ginger, cook 1 minute.
  • Mix soy sauce, maple syrup, and rice vinegar into the skillet.
  • Add cooked noodles and toss to coat evenly.
  • Cook 2 minutes until heated through.
  • Garnish with green onions and sesame seeds before serving.
