- 1 cup vegan shrimp
- ½ cup chopped onions
- ½ cup chopped celery
- ½ cup chopped bell peppers
- 1 cup cooked kidney beans
- 1 tablespoon olive oil
- 1 tablespoon flour for roux
- 1 teaspoon garlic paste
- 1 teaspoon paprika
- ½ teaspoon chili powder
- ½ teaspoon pepper
- ½ teaspoon salt
- 1 teaspoon soy sauce
- 2 cups vegetable broth
- ½ cup chopped tomatoes
- 1 teaspoon lemon juice
- Fresh parsley
Heat oil in a pot.
Add flour and whisk for a golden roux.
Add onions, celery, and bell peppers.
Stir for 3 minutes.
Add garlic paste and paprika.
Add tomatoes and vegan shrimp.
Mix in chili powder, salt, and pepper.
Add kidney beans.
Pour vegetable broth.
Add soy sauce.
Simmer 15–18 minutes.
Add lemon juice.
Garnish with parsley.
