  • 1 cup quinoa pasta dry
  • ½ cup chickpeas cooked
  • ½ cup cherry tomatoes halved
  • ¼ cup cucumber diced
  • ¼ cup bell pepper diced
  • 2 tablespoons red onion thin slices
  • 2 tablespoons parsley chopped
  • 1 tablespoon olive oil for coating

For Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon pepper
  • ¼ teaspoon salt

Instructions
 

  • Boil quinoa pasta.
  • Drain fully.
  • Add chickpeas to bowl.
  • Add tomatoes.
  • Add cucumber.
  • Add bell pepper.
  • Add onions.
  • Add parsley.
  • Add pasta.
  • Mix oil with lemon juice.
  • Add mustard.
  • Add garlic powder.
  • Add salt.
  • Add pepper.
  • Whisk well.
  • Pour dressing.
  • Toss salad.
  • Adjust seasoning.
  • Chill briefly.
  • Serve fresh.
