Ingredients
  

  • 6 cups vegetable broth
  • 3 tbsp white miso paste
  • cups firm tofu cubed
  • 1 cup sliced mushrooms
  • ½ cup shredded carrots
  • 1 cup baby spinach
  • 2 tbsp sliced green onions
  • 1 sheet nori sliced thin
  • 1 tsp grated ginger

Instructions
 

  • Bring vegetable broth to a gentle simmer in a saucepan.
  • Add mushrooms, carrots, and ginger, cooking 4 minutes.
  • Stir miso paste with a little hot broth in a small bowl.
  • Pour dissolved miso mixture back into the pot.
  • Add cubed tofu and cook 3 minutes.
  • Stir in spinach until wilted.
  • Ladle soup into bowls.
  • Top with green onions and nori strips.
