Ingredients
  

  • 1 tbsp olive oil
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic minced
  • 1 cup dried brown lentils
  • 1 can 14 oz diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup chopped spinach
  • 2 tbsp chopped parsley

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery, cook 5 minutes.
  • Stir in garlic and cook 1 minute.
  • Add lentils, diced tomatoes, and vegetable broth.
  • Stir in thyme, cumin, salt, and pepper.
  • Bring soup to a simmer and cook 25 minutes.
  • Add spinach and cook 2 minutes.
  • Sprinkle parsley before serving.
