  • 1 cup whole-wheat pasta

  • ¼ cup vegan feta
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon chickpea protein powder unflavored

Instructions
 

  • Add water to pot.
  • Bring to boil.
  • Add pasta.
  • Cook until firm.
  • Drain completely.
  • Cool pasta slightly.
  • Add pasta to bowl.
  • Add cucumber.
  • Add tomatoes.
  • Add onions.
  • Add olives.
  • Add vegan feta.
  • Add chickpea protein.
  • Add olive oil.
  • Add lemon juice.
  • Add oregano.
  • Add garlic powder.
  • Add salt.
  • Add pepper.
  • Toss until coated evenly.
