- 1 cup shredded coconut unsweetened
- 1 scoop vanilla protein powder
- ¼ cup coconut oil melted
- ¼ cup honey or maple syrup
- 1 egg
- ½ tsp baking powder
- ½ tsp vanilla extract
- Pinch of salt
Preheat oven to 350°F (175°C).
Line baking tray with parchment paper.
Add shredded coconut, protein powder, baking powder, and salt into bowl.
Mix dry ingredients evenly.
Add melted coconut oil, honey, egg, and vanilla extract.
Stir until dough forms.
Scoop portions onto tray.
Shape into small rounds.
Bake for 10–12 minutes.
Cool before serving.
