Ingredients
  

  • 1 cup shredded coconut unsweetened
  • 1 scoop vanilla protein powder
  • ¼ cup coconut oil melted
  • ¼ cup honey or maple syrup
  • 1 egg
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line baking tray with parchment paper.
  • Add shredded coconut, protein powder, baking powder, and salt into bowl.
  • Mix dry ingredients evenly.
  • Add melted coconut oil, honey, egg, and vanilla extract.
  • Stir until dough forms.
  • Scoop portions onto tray.
  • Shape into small rounds.
  • Bake for 10–12 minutes.
  • Cool before serving.
