Ingredients
  

  • Rolled oats: 1 cup
  • Oat flour: ½ cup
  • Plant-based chocolate protein powder: ¾ cup
  • Cocoa powder unsweetened: 2 tbsp
  • Peanut butter or almond butter: ⅓ cup
  • Maple syrup: ¼ cup
  • Almond milk unsweetened: ¼ cup
  • Baking powder: ½ tsp
  • Vanilla extract: 1 tsp
  • Salt: a pinch
  • Dark chocolate chips vegan, optional: 2 tbsp

Instructions
 

  • Preheat oven to 180°C and line baking tray with parchment paper.
  • Combine oats, oat flour, protein powder, cocoa, baking powder, and salt in a bowl.
  • Mix peanut butter, maple syrup, almond milk, and vanilla separately until smooth.
  • Add wet mixture to dry ingredients and stir into thick dough.
  • Fold in chocolate chips if using.
  • Divide dough into six portions and flatten slightly on tray.
  • Bake for 12 minutes until edges set and centers remain soft.
  • Cool briefly before serving.
