- Vegan chicken chunks soy or pea protein based: 300 g
- Sweet potato peeled and cubed: 2 cups
- Olive oil: 2 tbsp
- Garlic powder: ½ tsp
- Smoked paprika: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Dried thyme or oregano: ½ tsp
- Chili flakes optional: ¼ tsp
- Fresh parsley chopped: 2 tbsp
Preheat oven to 200°C.
Add sweet potato cubes using 2 cups to a bowl.
Toss with 1 tbsp olive oil, salt, paprika, and pepper.
Spread sweet potatoes on a baking tray.
Roast 18–20 minutes, flipping once, until golden.
Heat remaining oil in a pan over medium heat.
Add vegan chicken using 300 g.
Season with garlic powder, herbs, chili flakes, and salt.
Cook 6–7 minutes until lightly crisp and heated through.
Combine roasted sweet potatoes with chicken.
Garnish with parsley and serve warm.
