Ingredients
  

  • 200 g chicken breast
  • 2 cups mixed greens
  • ½ cup cherry tomatoes halved
  • ½ cucumber sliced
  • 2 tbsp Greek yogurt or light mayo
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Season chicken with salt and pepper.
  • Cook chicken in pan with olive oil for 6–8 minutes.
  • Let it rest, then slice into pieces.
  • Add greens, tomatoes, and cucumber into bowl.
  • Add cooked chicken.
  • Mix yogurt and lemon juice in small bowl.
  • Pour dressing over salad.
  • Toss well and serve fresh.
