- ½ cup black beans cooked
- ½ cup corn kernels
- ½ cup bell peppers diced
- ¼ cup onions chopped
- 1 tablespoon lime juice
- 1 tablespoon salsa
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon olive oil
- 2 tablespoons cilantro chopped
Heat skillet.
Add oil.
Add onions.
Sauté one minute.
Add peppers.
Cook two minutes.
Add beans.
Add corn.
Add cumin.
Add paprika.
Add salt.
Add pepper.
Mix well.
Place rice in bowl.
Add cooked mixture.
Add salsa.
Add lime juice.
Sprinkle cilantro.
Toss lightly.
