  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon olive oil
  • 2 tablespoons cilantro chopped

Instructions
 

  • Heat skillet.
  • Add oil.
  • Add onions.
  • Sauté one minute.
  • Add peppers.
  • Cook two minutes.
  • Add beans.
  • Add corn.
  • Add cumin.
  • Add paprika.
  • Add salt.
  • Add pepper.
  • Mix well.
  • Place rice in bowl.
  • Add cooked mixture.
  • Add salsa.
  • Add lime juice.
  • Sprinkle cilantro.
  • Toss lightly.
  • Serve warm.
