Ingredients
Ground beef
lean: 500g
Olive oil: 1 tablespoon
Onion
chopped: 1 medium
Garlic
minced: 3 cloves
Taco seasoning: 2 tablespoons
Tomato paste: 2 tablespoons
Water: 1/4 cup
Corn tortillas: 8 small
Lettuce
shredded: 1 cup
Tomato
diced: 1 cup
Shredded cheese: 1/2 cup
Greek yogurt or sour cream: 1/2 cup
Lime wedges: 4
Instructions
Heat olive oil in a skillet, sauté chopped onion and minced garlic until soft and fragrant.
Add ground beef, cook thoroughly while breaking apart until browned and fully cooked.
Stir in taco seasoning, tomato paste, and water, then simmer for 5 minutes until thickened.
Warm tortillas in a dry pan until soft and slightly toasted.
Fill tortillas with beef mixture, then add lettuce, tomato, cheese, and yogurt.
Squeeze lime juice on top and serve immediately.
