Ingredients
  

For the Protein Filling

  • Vegan beef-style mince soy or pea protein: 250 g
  • Olive oil: 1 tbsp
  • Onion finely chopped: ½ cup
  • Garlic minced: 1½ tsp
  • Tomato paste: 2 tbsp
  • Soy sauce: 1 tbsp
  • Smoked paprika: 1 tsp
  • Cumin powder: 1 tsp
  • Chili powder: ½ tsp
  • Black pepper: ½ tsp
  • Salt: ½ tsp
  • Water: ¼ cup

For Assembly

  • Small taco shells or tortillas: 4
  • Lettuce shredded: 1 cup
  • Tomato chopped: ½ cup
  • Red onion sliced: ¼ cup
  • Vegan sour cream or cashew crema: 2 tbsp
  • Fresh coriander: 1 tbsp

Instructions
 

  • Heat skillet over medium heat and add olive oil.
  • Sauté onion for 2 minutes until soft and slightly golden.
  • Add garlic and cook 30 seconds until fragrant.
  • Add vegan beef mince and cook 4 minutes, breaking it apart.
  • Stir in tomato paste, soy sauce, spices, salt, and water.
  • Simmer 5 minutes until mixture thickens and coats evenly.
  • Warm taco shells, fill generously, and top with vegetables and crema.
