Ingredients
For the Protein Filling
Vegan beef-style mince
soy or pea protein: 250 g
Olive oil: 1 tbsp
Onion
finely chopped: ½ cup
Garlic
minced: 1½ tsp
Tomato paste: 2 tbsp
Soy sauce: 1 tbsp
Smoked paprika: 1 tsp
Cumin powder: 1 tsp
Chili powder: ½ tsp
Black pepper: ½ tsp
Salt: ½ tsp
Water: ¼ cup
For Assembly
Small taco shells or tortillas: 4
Lettuce
shredded: 1 cup
Tomato
chopped: ½ cup
Red onion
sliced: ¼ cup
Vegan sour cream or cashew crema: 2 tbsp
Fresh coriander: 1 tbsp
Instructions
Heat skillet over medium heat and add olive oil.
Sauté onion for 2 minutes until soft and slightly golden.
Add garlic and cook 30 seconds until fragrant.
Add vegan beef mince and cook 4 minutes, breaking it apart.
Stir in tomato paste, soy sauce, spices, salt, and water.
Simmer 5 minutes until mixture thickens and coats evenly.
Warm taco shells, fill generously, and top with vegetables and crema.
