  • 12 oz plant-based beef crumbles
  • 1 tbsp olive oil
  • 1 cup diced onion
  • 1 cup sliced zucchini
  • 1 cup diced bell pepper
  • 1 cup cooked black beans
  • 1 cup diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped parsley

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and cook 3 minutes.
  • Stir in plant-based beef crumbles and cook 5 minutes.
  • Add zucchini and bell pepper, cook 4 minutes.
  • Mix in black beans and diced tomatoes.
  • Season with paprika, cumin, garlic powder, salt, and pepper.
  • Cook mixture 6 minutes, stirring occasionally.
  • Sprinkle parsley before serving.
