Ingredients
Ripe banana
mashed: 1 large
Rolled oats: 1 cup
Plant-based vanilla protein powder: ¾ cup
Peanut butter or almond butter: ⅓ cup
Almond milk
unsweetened: ¼ cup
Baking powder: ½ tsp
Cinnamon powder: ½ tsp
Vanilla extract: 1 tsp
Salt: a pinch
Dark chocolate chips
vegan, optional: 2 tbsp
Instructions
Preheat oven to 180°C and line baking tray with parchment paper.
Mash banana in a bowl until smooth.
Add peanut butter, almond milk, and vanilla, then mix well.
Stir in oats, protein powder, baking powder, cinnamon, and salt.
Fold until thick dough forms.
Add chocolate chips if using.
Scoop dough into six portions and flatten slightly.
Bake for 12 minutes until set but soft.
Cool briefly before serving.
