Ingredients
Almond flour: 1 cup
Rolled oats: ½ cup
Plant-based vanilla protein powder: ¾ cup
Almond butter: ⅓ cup
Maple syrup: ¼ cup
Almond milk
unsweetened: ¼ cup
Baking powder: ½ tsp
Vanilla extract: 1 tsp
Almond essence
optional: ¼ tsp
Salt: a pinch
Sliced almonds
optional: 2 tbsp
Instructions
Preheat oven to 180°C and line baking tray with parchment paper.
Add almond flour, oats, protein powder, baking powder, and salt to a bowl.
Whisk almond butter, maple syrup, almond milk, vanilla, and almond essence until smooth.
Combine wet ingredients with dry mixture to form thick dough.
Fold in sliced almonds if using.
Divide dough into six portions and flatten gently on tray.
Bake for 12 minutes until edges set and centers remain soft.
Cool briefly before serving.
