Ingredients
  

  • Almond flour: 1 cup
  • Rolled oats: ½ cup
  • Plant-based vanilla protein powder: ¾ cup
  • Almond butter: ⅓ cup
  • Maple syrup: ¼ cup
  • Almond milk unsweetened: ¼ cup
  • Baking powder: ½ tsp
  • Vanilla extract: 1 tsp
  • Almond essence optional: ¼ tsp
  • Salt: a pinch
  • Sliced almonds optional: 2 tbsp

Instructions
 

  • Preheat oven to 180°C and line baking tray with parchment paper.
  • Add almond flour, oats, protein powder, baking powder, and salt to a bowl.
  • Whisk almond butter, maple syrup, almond milk, vanilla, and almond essence until smooth.
  • Combine wet ingredients with dry mixture to form thick dough.
  • Fold in sliced almonds if using.
  • Divide dough into six portions and flatten gently on tray.
  • Bake for 12 minutes until edges set and centers remain soft.
  • Cool briefly before serving.
