Ingredients
Roasted peanuts
crushed: 1½ cups
Peanut butter
unsweetened: ½ cup
Jaggery powder or maple syrup: ½ cup
Rolled oats: ½ cup
Coconut oil: 1 tbsp
Vanilla extract: ½ tsp
Pinch
of salt
Instructions
Line a tray with parchment paper and set aside.
Heat saucepan over low heat, add peanut butter, coconut oil, and jaggery.
Stir continuously until melted and smooth without boiling.
Remove from heat, add crushed peanuts, oats, vanilla, and salt.
Mix thoroughly until evenly coated.
Press mixture firmly into tray and flatten evenly.
Chill for 30 minutes, then slice into bars.
