Ingredients
  

  • 4 bell peppers tops cut off and seeds removed
  • 1 lb ground turkey
  • 1/2 onion finely chopped
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup chopped tomatoes
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off bell peppers and remove seeds.
  • In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until softened.
  • Add ground turkey, smoked paprika, cumin, salt, and pepper. Cook until browned and cooked through.
  • Stir in chopped tomatoes and cilantro, and cook for another 2 minutes.
  • Stuff each bell pepper with the turkey mixture and place in a baking dish.
  • Bake for 25-30 minutes until peppers are tender.
  • Serve and enjoy!
