- 4 bell peppers tops cut off and seeds removed
- 1 lb ground turkey
- 1/2 onion finely chopped
- 1 garlic clove minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup chopped tomatoes
- 1/4 cup fresh cilantro chopped
Preheat the oven to 375°F (190°C).
Slice the tops off bell peppers and remove seeds.
In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until softened.
Add ground turkey, smoked paprika, cumin, salt, and pepper. Cook until browned and cooked through.
Stir in chopped tomatoes and cilantro, and cook for another 2 minutes.
Stuff each bell pepper with the turkey mixture and place in a baking dish.
Bake for 25-30 minutes until peppers are tender.
