Ingredients
  

  • 8 oz large shrimp peeled and deveined
  • 2 medium zucchinis spiralized into noodles
  • 3 tbsp ghee or paleo-friendly butter
  • 2 cloves garlic minced
  • 1/4 cup chicken broth preferably low-sodium
  • 1 tbsp lemon juice
  • 1/2 tsp red pepper flakes optional
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat ghee in a skillet over medium heat.
  • Add shrimp to the skillet and cook until pink, about 3-4 minutes per side.
  • Remove shrimp and set aside.
  • In the same skillet, add garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the chicken broth, lemon juice, and red pepper flakes. Stir to combine.
  • Add zucchini noodles to the skillet and cook for 3-5 minutes until slightly tender.
  • Return shrimp to the skillet, toss everything together, and season with salt and pepper.
  • Garnish with fresh parsley and serve immediately.
