Paleo Pecan and Cinnamon Snack Bars are chewy, nutty, naturally sweetened treats that double as fuel and a dessert-like reward.

- 1 cup pecans
- 1/2 cup almonds
- 1 cup Medjool dates pitted
- 1/4 cup shredded coconut
- 2 tbsp almond butter
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- Pinch of sea salt
Preheat oven to 325°F (160°C) and line your baking dish with parchment.
Add pecans, almonds, and coconut to a food processor. Pulse until coarsely chopped.
Toss in dates, almond butter, cinnamon, vanilla, and salt. Blend until it forms a sticky dough.
Press the dough evenly into the lined baking dish.
Bake for 18–20 minutes until firm and golden around edges.
Let cool completely before slicing into bars.
Store in an airtight container or directly in your face.
