Paleo Mango Coconut Bites

A chewy, sweet, tropical-inspired snack made with dried mango, shredded coconut, and a few pantry staples. No oven. All flavor.

- 1 cup dried mango unsweetened
- ¾ cup shredded coconut unsweetened
- 2 tbsp coconut oil melted
- 1 tbsp maple syrup
- 1 tsp lime juice optional but bougie
- Pinch of sea salt
- 2 tbsp almond flour for structure
Soak dried mango in warm water for 5–10 minutes to soften.
Drain mango and pat dry (they don’t need a spa day, just a quick towel-off).
Add mango, coconut, coconut oil, maple syrup, lime juice, and salt to the food processor.
Blend until sticky and well combined.
Add almond flour and pulse a few times until doughy.
Scoop into 1-inch balls or press into mini silicone molds for aesthetic purposes.
Chill in the fridge for 30 minutes or until firm.
Store in an airtight container for up to a week—if they last that long.
