Paleo Cucumber and Hummus Bites are a quick, refreshing snack that pairs crisp cucumber rounds with a creamy, protein-rich hummus topping.

Ingredients
  

  • 1 large cucumber
  • 1/2 cup paleo-friendly hummus chickpea-free; made with zucchini or cauliflower
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1 tbsp tahini
  • Pinch sea salt
  • Dash black pepper
  • Fresh parsley or paprika optional garnish

Instructions
 

  • Slice cucumber into 1/2-inch thick rounds. Try to make them look like you didn’t just eyeball it.
  • If making hummus, blend zucchini (or cauliflower), tahini, lemon juice, garlic powder, salt, and pepper until smooth and creamy.
  • Use a spoon or piping bag to dollop or swirl hummus onto each cucumber round.
  • Garnish with parsley, paprika, or anything Instagram-worthy.
  • Serve immediately or chill for up to two hours. Just don’t forget them in the fridge like last week’s leftovers.
