Paleo Cucumber and Hummus Bites are a quick, refreshing snack that pairs crisp cucumber rounds with a creamy, protein-rich hummus topping.

- 1 large cucumber
- 1/2 cup paleo-friendly hummus chickpea-free; made with zucchini or cauliflower
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- 1 tbsp tahini
- Pinch sea salt
- Dash black pepper
- Fresh parsley or paprika optional garnish
Slice cucumber into 1/2-inch thick rounds. Try to make them look like you didn’t just eyeball it.
If making hummus, blend zucchini (or cauliflower), tahini, lemon juice, garlic powder, salt, and pepper until smooth and creamy.
Use a spoon or piping bag to dollop or swirl hummus onto each cucumber round.
Garnish with parsley, paprika, or anything Instagram-worthy.
Serve immediately or chill for up to two hours. Just don’t forget them in the fridge like last week’s leftovers.
