Ingredients
  

  • 2 cups shredded unsweetened coconut
  • 2 egg whites
  • 2 tbsp honey or maple syrup for vegan option
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions
 

  • Preheat your oven to 325°F (165°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, whisk egg whites until frothy.
  • Add honey, vanilla, and sea salt. Stir to combine.
  • Gently fold in shredded coconut.
  • Scoop spoonfuls of the mixture and shape into little mounds.
  • Bake for 15-20 minutes until golden brown.
  • Cool completely before indulging.
