- 1 cup pitted Medjool dates
- ½ cup shredded unsweetened coconut plus extra for rolling
- ½ cup raw almonds or cashews
- 1 tbsp coconut oil
- ½ tsp vanilla extract
- Pinch of salt
Toss dates and nuts into the food processor. Pulse until finely chopped and slightly sticky, like your ex's DMs.
Add coconut, oil, vanilla, and salt. Blend until combined. It should clump like your laundry pile.
Scoop out mixture and roll into 1-inch balls. Channel your inner pastry chef—or your inner toddler.
Roll each ball in extra coconut. Make it snow, girl.
