- 1 tbsp olive oil
- 1/2 onion chopped
- 2 garlic cloves minced
- 1/4 cup coconut aminos or soy sauce for non-paleo
- 1 tsp sesame oil
- 1/2 tsp ginger grated
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 1 head of butter lettuce or any lettuce of your choice
- Salt and pepper to taste
Heat olive oil in a skillet over medium heat.
Add the ground chicken and cook until browned, breaking it apart with a spoon.
Add the chopped onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
Stir in the coconut aminos and sesame oil, cooking for another 2-3 minutes.
Remove from heat and stir in the shredded carrots and green onions.
Spoon the chicken mixture onto a lettuce leaf, fold it up like a taco.
