Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1/2 onion chopped
  • 2 garlic cloves minced
  • 1/4 cup coconut aminos or soy sauce for non-paleo
  • 1 tsp sesame oil
  • 1/2 tsp ginger grated
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 head of butter lettuce or any lettuce of your choice
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add the ground chicken and cook until browned, breaking it apart with a spoon.
  • Add the chopped onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
  • Stir in the coconut aminos and sesame oil, cooking for another 2-3 minutes.
  • Remove from heat and stir in the shredded carrots and green onions.
  • Spoon the chicken mixture onto a lettuce leaf, fold it up like a taco.
  • Serve and enjoy your guilt-free wraps!
