Paleo Cauliflower Fried Rice

A low-carb twist on fried rice using cauliflower, packed with veggies, and made in no time.

- 1 medium head of cauliflower riced (about 4 cups)
- 1 tbsp olive oil
- 2 eggs beaten
- 1/2 cup carrots diced
- 1/2 cup peas
- 2 green onions sliced
- 3 cloves garlic minced
- 2 tbsp coconut aminos
- 1 tbsp sesame oil
- Salt and pepper to taste
Heat olive oil in a large skillet or wok over medium heat.
Add diced carrots, peas, and green onions. Stir-fry for 2-3 minutes.
Push the veggies to one side, and pour beaten eggs into the pan. Scramble until fully cooked.
Add garlic and cauliflower rice. Stir to combine.
Drizzle coconut aminos and sesame oil over the mixture, stirring until everything is well-coated.
Season with salt and pepper to taste. Cook for another 5 minutes until the cauliflower is tender.
Serve hot, and enjoy the goodness.
