Paleo Cauliflower Fried Rice

A low-carb twist on fried rice using cauliflower, packed with veggies, and made in no time.

Ingredients
  

  • 1 medium head of cauliflower riced (about 4 cups)
  • 1 tbsp olive oil
  • 2 eggs beaten
  • 1/2 cup carrots diced
  • 1/2 cup peas
  • 2 green onions sliced
  • 3 cloves garlic minced
  • 2 tbsp coconut aminos
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet or wok over medium heat.
  • Add diced carrots, peas, and green onions. Stir-fry for 2-3 minutes.
  • Push the veggies to one side, and pour beaten eggs into the pan. Scramble until fully cooked.
  • Add garlic and cauliflower rice. Stir to combine.
  • Drizzle coconut aminos and sesame oil over the mixture, stirring until everything is well-coated.
  • Season with salt and pepper to taste. Cook for another 5 minutes until the cauliflower is tender.
  • Serve hot, and enjoy the goodness.
