Ingredients
  

  • 1 cup raw cashews
  • ½ cup unsweetened shredded coconut
  • ¼ cup almond flour
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Toss cashews and coconut in a food processor. Pulse until it looks crumbly, like your willpower around carbs.
  • Add almond flour, maple syrup, melted coconut oil, vanilla, and salt. Blend until it forms a sticky dough.
  • Line a loaf pan with parchment. Press the mixture evenly with a spatula or your emotionally drained palms.
  • Chill in the fridge for 30 minutes or until firm enough to cut without falling apart like your weekend plans.
  • Slice into bars, store in the fridge, and snack whenever life feels like a chaotic group chat.
