- 1 cup raw cashews
- ½ cup unsweetened shredded coconut
- ¼ cup almond flour
- 2 tbsp maple syrup
- 1 tbsp coconut oil melted
- 1 tsp vanilla extract
- Pinch of salt
Toss cashews and coconut in a food processor. Pulse until it looks crumbly, like your willpower around carbs.
Add almond flour, maple syrup, melted coconut oil, vanilla, and salt. Blend until it forms a sticky dough.
Line a loaf pan with parchment. Press the mixture evenly with a spatula or your emotionally drained palms.
Chill in the fridge for 30 minutes or until firm enough to cut without falling apart like your weekend plans.
Slice into bars, store in the fridge, and snack whenever life feels like a chaotic group chat.
