These no-bake Paleo Carrot Cake Bites are the perfect sweet snack—gluten-free, vegan, and made with wholesome, clean ingredients.

- 1 cup shredded carrots
- 3/4 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup raw walnuts
- 1/2 cup Medjool dates pitted
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of sea salt
- 1/2 tsp vanilla extract
- 1 tbsp coconut oil melted, optional for extra richness
Add walnuts and dates to a food processor. Pulse until crumbly and combined, but not a paste.
Toss in shredded carrots, almond flour, coconut, chia seeds, spices, vanilla, and sea salt.
Blend until everything looks delicious and sticks together when pressed.
Optional: add melted coconut oil for a softer texture.
Roll mixture into bite-sized balls using your hands.
Chill in the fridge for at least 30 minutes.
Store in an airtight container, and pretend you’ll only eat one.
