For the Ribs:
- 2 racks of pork ribs
- 1 tbsp olive oil
- 1/4 cup apple cider vinegar
- 1/2 cup paleo BBQ sauce
- Salt and pepper to taste
For the Coleslaw:
- 4 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup paleo-friendly mayo
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Preheat oven to 300°F (150°C).
Rub ribs with olive oil, salt, pepper, and apple cider vinegar.
Wrap ribs tightly in foil and bake for 2 hours.
Mix cabbage, carrots, mayo, vinegar, salt, and pepper in a bowl for coleslaw.
After 2 hours, remove ribs, brush with BBQ sauce, and grill for 5-10 minutes.
