For the chicken skewers:
- 1 lb chicken breast cut into cubes
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1/2 cup paleo BBQ sauce
For the roasted veggies:
- 1 red bell pepper cut into chunks
- 1 zucchini sliced
- 1 red onion cut into chunks
- 1 cup cherry tomatoes
- 1 tbsp olive oil
- Salt and pepper to taste
Preheat your grill or grill pan to medium-high heat.
In a bowl, toss chicken cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
Thread chicken and veggies onto skewers, alternating between them.
Brush the chicken with paleo BBQ sauce.
Place the skewers on the grill and cook for 4-5 minutes on each side until the chicken is cooked through.
For veggies, grill for 3-4 minutes on each side until tender and slightly charred.
