Ingredients
  

For the chicken skewers:

  • 1 lb chicken breast cut into cubes
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup paleo BBQ sauce

For the roasted veggies:

  • 1 red bell pepper cut into chunks
  • 1 zucchini sliced
  • 1 red onion cut into chunks
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill or grill pan to medium-high heat.
  • In a bowl, toss chicken cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Thread chicken and veggies onto skewers, alternating between them.
  • Brush the chicken with paleo BBQ sauce.
  • Place the skewers on the grill and cook for 4-5 minutes on each side until the chicken is cooked through.
  • For veggies, grill for 3-4 minutes on each side until tender and slightly charred.
  • Serve with extra BBQ sauce for dipping if desired.
