- 2 ripe bananas mashed
- 2 cups almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil melted
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 tsp cinnamon
- 2 eggs or flax eggs for vegan
- 1 tsp vanilla extract
Preheat your oven to 350°F (175°C).
Grease the muffin tin or line with muffin liners.
In a bowl, mash the bananas.
Add eggs, maple syrup, coconut oil, and vanilla. Stir well.
In another bowl, mix almond flour, baking soda, cinnamon, and salt.
Combine wet and dry ingredients until fully mixed.
Spoon batter into muffin cups.
Bake for 20-25 minutes or until golden brown.
