Paleo Apple Cinnamon Energy Bars

These Paleo Apple Cinnamon Energy Bars blend the sweetness of apples with warm cinnamon, all wrapped up in an energy-packed, no-bake bar.

- 1 cup dried apples chopped
- 1 cup almond flour
- ½ cup unsweetened shredded coconut
- ¼ cup chia seeds
- 1 tsp cinnamon
- 2 tbsp maple syrup
- 2 tbsp coconut oil melted
- 1 tsp vanilla extract
- Pinch of sea salt
In a food processor, pulse dried apples until finely chopped.
Add almond flour, shredded coconut, chia seeds, and cinnamon. Blend to combine.
Drizzle in maple syrup, melted coconut oil, and vanilla. Pulse until the mixture sticks together.
Line a baking dish with parchment paper (or not, if you’re a rebel).
Press the mixture into the dish, evenly spreading it out.
Chill in the fridge for 1–2 hours to firm up.
Slice into 8 bars and enjoy—or hide them from your family.
