These Paleo Apple Cinnamon Energy Bars blend the sweetness of apples with warm cinnamon, all wrapped up in an energy-packed, no-bake bar.

Ingredients
  

  • 1 cup dried apples chopped
  • 1 cup almond flour
  • ½ cup unsweetened shredded coconut
  • ¼ cup chia seeds
  • 1 tsp cinnamon
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions
 

  • In a food processor, pulse dried apples until finely chopped.
  • Add almond flour, shredded coconut, chia seeds, and cinnamon. Blend to combine.
  • Drizzle in maple syrup, melted coconut oil, and vanilla. Pulse until the mixture sticks together.
  • Line a baking dish with parchment paper (or not, if you’re a rebel).
  • Press the mixture into the dish, evenly spreading it out.
  • Chill in the fridge for 1–2 hours to firm up.
  • Slice into 8 bars and enjoy—or hide them from your family.
