Instructions
 

  • Heat oil: Warm olive oil in a saucepan over medium heat.
  • Sauté onions: Add onions and cook until translucent for about 4 minutes.
  • Garlic and mushrooms: Toss in garlic and mushrooms, cooking until the mushrooms release moisture and turn golden brown, around 10 minutes.
  • Season: Sprinkle in salt, black pepper, and thyme, stirring well.
  • Deglaze: Pour in balsamic vinegar to scrape up the tasty brown bits from the pan.
  • Add liquids: Stir in vegetable broth and tomato paste, mixing until smooth.
  • Simmer: Lower heat and simmer for 8 minutes until thickened.
  • Optional cream: Stir in cream for a creamy variation.
  • Cool and use: Allow to cool before spreading over pizza or storing in the refrigerator for up to 5 days.
