Ingredients
Vegan protein chops
soy or pea-based: 2 pieces (120 g each)
Olive oil: 1 tbsp
Dijon mustard: 1½ tbsp
Maple syrup: 1 tbsp
Garlic
minced: 1 tsp
Soy sauce: 1 tsp
Apple cider vinegar: 1 tsp
Black pepper: ½ tsp
Smoked paprika: ½ tsp
Water: 2 tbsp
Fresh thyme
chopped: 1 tsp
Instructions
Heat skillet over medium heat, add olive oil, and sear vegan chops for 3 minutes per side.
Whisk mustard, maple syrup, soy sauce, vinegar, pepper, paprika, and water until smooth.
Remove chops, sauté garlic for 30 seconds until aromatic but not dramatic.
Pour glaze into skillet, simmer two minutes until slightly thick and glossy.
Return chops, coat evenly, cook five minutes, and flip once for balanced caramelization.
Finish with thyme and serve warm.
