Vegan roasted sweet potatoes coated in maple syrup glaze, baked until caramelized and delicious.

- Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
- Olive oil – 2 tbsp
- Maple syrup – 3 tbsp
- Cinnamon – ½ tsp
- Salt – 1 tsp
- Black pepper – ½ tsp
- Fresh thyme – 1 tsp chopped (optional garnish)
Preheat oven to 400°F (200°C).
Line baking sheet with parchment paper.
In a bowl, combine sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper.
Toss until evenly coated.
Spread potatoes in a single layer on baking sheet.
Roast 30–35 minutes, flipping halfway, until caramelized and tender.
Garnish with thyme before serving.
