Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or non-dairy cream
  • 1 cup shredded cheddar cheese
  • 4 strips bacon cooked and crumbled
  • 1/2 cup sour cream
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • Fresh chives for garnish

Instructions
 

  • Cook the Bacon: Fry bacon strips in a pan until crispy. Crumble and set aside.
  • Sauté the Onion and Garlic: Heat olive oil in a large pot. Add diced onion and garlic, cooking until soft.
  • Add Potatoes and Broth: Add diced potatoes and vegetable broth. Bring to a boil and then simmer for 15-20 minutes.
  • Blend the Soup: Once the potatoes are tender, blend the mixture until smooth using an immersion blender.
  • Add Cream and Seasoning: Stir in heavy cream, salt, pepper, and paprika. Simmer for an additional 5 minutes.
  • Top and Serve: Ladle the soup into bowls, top with cheddar, bacon, sour cream, and chives.
